Lentil Salad

- 1 head romaine lettuce, chopped
- 2 cups cooked lentils
- 1 diced carrot
- ¼ chopped red onion
- ¼ cup olives
- ½ chopped cucumber
- Dressing
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Salt, dash
- Pepper, dash
- Place chopped lettuce and lentils in a large salad bowl. Chop vegetables and add to salad.
- Mix dressing ingredients and pour over the salad and toss.
